 Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup peas
  • ½ lb asparagus, trimmed and chopped
  • 3 scallions, trimmed and chopped
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • ¾ lb fettuccine
  • ½ cup full-fat Greek yogurt
  • 2/3 cup grated Parmesan cheese, plus more for garnish
  • 3 tablespoons chopped fresh parsley, for garnish
  • 2 tablespoons chopped fresh tarragon, for garnish

Directions:

  1. Bring water to a boil in a large saucepan. Place the butter in a large skillet and melt it over medium heat. Add peas, asparagus, scallions, and garlic, season it with salt and pepper, and cook, stirring constantly, until the asparagus is tender, about 4 minutes. Transfer the mixture to a bowl.
  2. Place the pasta in the water and cook until it is al dente, about 6 minutes. Drain the pasta and add it to the vegetable mixture.
  3. Add the yogurt and Parmesan and toss to combine. Garnish the dish with the parsley and tarragon and enjoy.
