 Ingredients:

  • 1 ½ lbs low-starch, new, or red potatoes, cubed
  • ½ cup olive oil
  • 3 tablespoons white wine vinegar
  • 2 tablespoons dry white wine
  • 1 teaspoon whole-grain Dijon mustard
  • 1 teaspoon kosher salt, plus more to taste
  • 1 shallot, minced
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh dill

Directions:

  1. Add the potatoes to a pot of water large enough to hold them all, bring to a boil, reduce heat and simmer until tender, about 15 minutes.
  2. While the potatoes are simmering, whisk together the oil, vinegar, wine, mustard, and teaspoon of salt.
  3. When the potatoes are done, drain them and place them in a bowl. Add the vinaigrette and shallot immediately and gently toss, making sure to coat all of the potatoes. Let cool completely.
  4. Taste and adjust seasoning as needed. Add the black pepper and fresh herbs, stir to incorporate, and serve.
