Cheeseburgers and Hash Brown Potatoes from The Elvis Presley Cookbook

Cheeseburgers

Makes 6 burgers

Ingredients

  • 1½ pounds ground beef
  • ¼ cup cornmeal
  • 1 teaspoon salt
  • Black pepper to taste
  • ⅓ cup chili sauce
  • 3 tablespoons pickle relish
  • 2 teaspoons yellow mustard
  • ⅓ cup butter
  • 6 hamburger buns, buttered and toasted
  • 6 slices American cheese

Instructions

  1. Preheat the oven on the Broil setting. In a large mixing bowl, combine the ground beef, cornmeal, salt, and black pepper. Form into 6 patties.
  2. In a small bowl, stir together the chili sauce, relish, and mustard.
  3. In a 12-inch skillet, melt the butter. Pan-fry the patties for about 12 minutes, turning several times, until done.
  4. Place the cooked patties on toasted hamburger bun bottoms set on top of a sheet pan. Spread the relish mixture on each patty. Top with cheese.
  5. Move the sheet pan to the broiler and cook the patties until the cheese begins to melt. Top with the burger bun tops, and serve.

Hash Brown Potatoes

Makes 4 servings

Ingredients

  • 3 large potatoes
  • 2 tablespoons grated onion
  • 1 teaspoon salt
  • Black pepper to taste
  • ⅓ cup butter

Instructions

  1. Preheat the oven to 425°F.
  2. Pierce the potatoes all over with a fork. Place the potatoes on a baking sheet, and bake for 1 hour, skin on, until the potatoes are tender. Let the potatoes cool thoroughly.
  3. Once cooled, peel and thinly slice the potatoes to make 4 cups. In a large mixing bowl toss the potatoes with the grated onion, and season with salt and black pepper.
  4. In a 12-inch skillet over medium heat, melt the butter. Add the potatoes to the skillet and brown them for about 10 minutes. Reduce the heat to low, and continue cooking the potatoes for about 8 minutes or until golden brown.
