Gin and Tonic Ice Lollies Recipe (from Gin O’Clock)
Makes: 6 adult-approved ice lollies
Ingredients:
- 250ml (9 fl oz) tonic water (let the fizz flatten a bit)
- 75ml (3 fl oz) gin
- 50g (2 oz) caster sugar
- Sliced strawberries
- Cucumber slices
- Fresh mint leaves
You’ll Also Need:
- 6-mould ice lolly tray
- 6 wooden lolly sticks
Instructions:
- Make your G&T base: In a mixing jug, stir together the flat tonic water, gin, and sugar until dissolved.
- Add your garnishes: Roughly chop the strawberries, cucumber, and mint. Drop a mixed handful into each mould.
- Pour & freeze: Carefully pour the G&T mix into each mould, then pop in the sticks.
- Freeze for at least 4 hours, or preferably overnight. Serve and prepare to be very popular.
