Ingredients
  • ¼ cup (60 mL) extra-virgin olive oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 1 tablespoon (15 mL) tomato paste

  • ½ teaspoon red pepper flakes

  • 2 pounds (910 g) heirloom tomatoes, cored and chopped

  • 1 (28-oz/794 g) can whole peeled tomatoes, with juice

  • 2 cups (480 mL) vegetable stock

  • ½ cup (120 mL) heavy cream

  • 4 ounces (115 g) smoked cheddar cheese, shredded

  • 1 tablespoon (15 mL) balsamic vinegar

  • 1 teaspoon sugar

  • Kosher salt and freshly ground black pepper, to taste

  • Fresh basil leaves, for garnish

Directions
  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, tomato paste, and red pepper flakes; cook for 1 minute.

  2. Add the fresh and canned tomatoes with their juice and bring to a boil. Add the vegetable stock, reduce the heat, and simmer, uncovered, for 30 minutes.

  3. Remove from the heat and purée the soup in batches in a blender (or use an immersion blender). Return to the pot. Stir in the cream, cheddar, vinegar, and sugar. Season with salt and pepper.

  4. Reheat gently, stirring until the cheese is melted and the soup is hot. Ladle into bowls, garnish with basil, and serve.
