Ingredients:
- 1 Flaky Pastry Crust
- 3 cups fresh plums, pitted and sliced
- ½ cup sugar, plus 1 tablespoon
- Juice of ½ lemon
- 3 tablespoons cornstarch
- Pinch of salt
- 2 tablespoons blackberry jam

1 egg, beaten
Directions:
- Preheat the oven to 400°F. Roll the crust out to 10 inches and place it on a baking sheet. In a large bowl, add the plums, the ½ cup of sugar, lemon juice, cornstarch, and salt. Stir well to coat all the fruit.
- Brush or smear the jam in the center of the crust. Place the fruit mixture in a mound in the center. Fold the edges of the crust over to cover about 1 inch of the filling. Brush the top of the crust with the beaten egg and sprinkle it with the remaining sugar.
- Put the galette in the oven and bake until the filling is bubbly, which is necessary for it to thicken sufficiently, about 35 to 40 minutes. Remove from the oven and allow the galette to cool before serving.
