Raspberry Ice Cream Cake Recipe – A Refreshing, No-Bake Summer Dessert

Makes 8-10 Servings | Active Time: 20 Minutes | Total Time: 1 Hour and 20 Minutes

Ingredients:

  • 1 large package of ladyfingers
  • 1 pint of vanilla ice cream
  • 1 (12 oz) jar of raspberry preserves
  • 1 pint of raspberry ice cream (homemade recipe can be found in Sweet Cravings)
  • 1 pint of fresh raspberries for topping
  • Whipped cream

 Directions:

  1. Line the bottom of a 9” springform pan with some of the ladyfingers.
  2. Spread layer of vanilla ice cream on top. Spread a thin layer of raspberry preserves on top of the vanilla ice cream and then add a layer of the black raspberry ice cream. Add another layer raspberry preserves, top with ladyfingers, and repeat until you reach the top of the pan.
  3. Place the pan in the freezer for at least 1 hour. When ready to serve, top each piece with fresh raspberries and a dollop of whipped cream.
