- 1 large package of ladyfingers
- 1 pint of vanilla ice cream
- 1 (12 oz) jar of raspberry preserves
- 1 pint of raspberry ice cream (homemade recipe can be found in Sweet Cravings)
- 1 pint of fresh raspberries for topping
- Whipped cream
Directions:
- Line the bottom of a 9” springform pan with some of the ladyfingers.
- Spread layer of vanilla ice cream on top. Spread a thin layer of raspberry preserves on top of the vanilla ice cream and then add a layer of the black raspberry ice cream. Add another layer raspberry preserves, top with ladyfingers, and repeat until you reach the top of the pan.
- Place the pan in the freezer for at least 1 hour. When ready to serve, top each piece with fresh raspberries and a dollop of whipped cream.
