Ingredients

For the Crust

  • 2 heaping cups pretzels (pretzel sticks work best), crushed

  • 10 tablespoons (⅔ cup) butter, melted

  • ¼ cup granulated sugar

For the Filling

  • 8 ounces (1 block) cream cheese, softened

  • 1½ cups granulated sugar

  • 1 teaspoon vanilla extract

  • 1¼ cups heavy cream

  • 2 tablespoons powdered sugar

For the Topping

  • 1 (6-ounce) package strawberry gelatin dessert

  • 1½ cups boiling water

  • 1 pint frozen sliced strawberries with sugar, thawed but chilled

Instructions

Step 1: Make the Pretzel Crust

Preheat the oven to 350°F.

In a large bowl, combine the crushed pretzels, melted butter, and sugar. Mix well, then firmly press the mixture into a 9 x 13-inch baking dish.

Bake for about 10 minutes, or until fragrant and lightly toasted. Remove from the oven and allow the crust to cool completely.

Step 2: Prepare the Cream Cheese Filling

Using an electric mixer, beat together the cream cheese, granulated sugar, and vanilla extract until smooth.

In a separate chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until fully combined.

Spread the filling evenly over the cooled pretzel crust, making sure to seal the edges completely. This helps prevent the gelatin layer from leaking underneath the filling.

Place the dish in the refrigerator while preparing the topping.

Step 3: Make the Strawberry Topping

In a separate bowl, whisk together the strawberry gelatin and boiling water until completely dissolved.

Stir in the thawed strawberries along with their juices.

Refrigerate the mixture for about 10 minutes, or until it begins to thicken but is not fully set.

Step 4: Assemble

Carefully pour the strawberry mixture over the cream cheese layer.

Cover with plastic wrap and refrigerate for at least 12 hours or overnight, until completely set.

Serve chilled.
