Watergate Salad Recipe

Makes: 8–10 servings

Ingredients

  • 1 (20-ounce) can crushed pineapple, drained (reserve the juice)
  • 1 (3.4-ounce) package pistachio instant pudding mix
  • ½ cup chopped pistachios, walnuts, or pecans
  • 2 cups whipped topping (such as Cool Whip)
  • 1 heaping cup mini marshmallows
  • ½ cup semisweet or dark chocolate chips
  • Maraschino cherries, drained, for garnish

Instructions

  1. Reserve about one-third of the pineapple juice and drain the rest.
  2. In a large bowl, combine the pineapple and reserved juice. Sprinkle the pistachio pudding mix over the top and stir until well mixed.
  3. Stir in the chopped nuts.
  4. Fold in the whipped topping, mini marshmallows, and chocolate chips.
  5. Transfer to a serving bowl, cover, and refrigerate for about 8 hours, or until chilled and set.
  6. Garnish with drained Maraschino cherries before serving.

Storage: Refrigerate for up to 3 days.
