Ingredients
- ½ cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 whole chicken, cut into pieces, or 8 assorted bone-in chicken pieces
- 4 tablespoons olive oil
- 1 large white onion, diced
- 1 green pepper, diced
- 2 cloves garlic, minced
- 1 large tomato, chopped
- 1 bay leaf
- 1 cup raisins
- 1 cup green olives, pitted and sliced
- 1½ cups dry red wine
- 2 cups chicken broth
- 12 ounces Spanish chorizo, sliced into coins

Preheat the oven to 325°F.

Combine the flour, salt, and pepper in a gallon-sized resealable plastic bag. Toss the chicken in the flour mixture, shaking well to coat.

In a large skillet over medium heat, heat the olive oil. Working in batches, brown the chicken, about 3 minutes per side.

Remove the chicken to a large casserole dish. To the same skillet, add the onion and cook 5 minutes. Add the green pepper, garlic, tomato, bay leaf, raisins, green olives, wine, broth, and chorizo. Simmer for about 10 minutes, until the veggies are soft.

Pour the mixture over the chicken, coating well. Bake for about 1 hour 15 minutes, until the chicken is falling off the bone. Serve immediately.
