Your favorite cookies, reimagined.Next Level Cookies takes the classics you already love and shows exactly what happens when you change the technique, shift the ratios, or reach for an unexpected ingredient.
Next Level Cookies shows you how small changes transform familiar recipes into something new. Chef and recipe developer Jimmy Callaway (trained at the award-winning Firedoor) organizes 90 original recipes by texture—chewy, gooey, crispy, crumbly, spongy, snappy—then moves each chapter from classic to inventive while providing skills you’ll use long after the last batch cools.
Each recipe traces its lineage—through culture, history, and ingredient evolution—so you understand not just how a cookie works, but why.
Bold flavors meet distinct textures—no two bites the same. Standouts include Blackout Triple Chocolate (cakey center, crisp edge), Salted Liquorice Mochi (deep chew, unexpected depth), Saffron Brûlée (torched custard core), Ube Crumble, and Espresso Caramel Samosa (snappy, nostalgic twist).
